お肉は奈良県が誇るハイクラスA4黒毛和牛「大和牛」

鎌倉時代から銘牛と記されている奈良県が誇るハイクラスなA4ロース黒毛和牛の「大和牛」を使用。
赤身の部分がとても柔らかく旨味が多いのが大和牛のいいところ。
また、オレイン酸を多く含む脂はあっさりとしていてもコク深いのが特徴です。

奈良の恵み割り下

吉野の老舗蔵の醤油を使用し、月ヶ瀬の干し椎茸と昆布を贅沢に使い鰹の香りをきかせて丁寧に作りました。
